If neither gauge is working right, I'd almost think something is wrong w/ the gauges, but you can check the senders to find out.

For the fuel gauge, you will need to get at the fuel pump & sender connection thats on top of the fuel tank. Easiest way is to tilt the bed up so you have enough clearance to get to it. Then find out whcih wire is the hot & cold wire going to the sender. Then ground it out, and see if the gauge goes to past full. If it does that, the sender is bad, and the gauge is fine. If not, then there is something wrong either w/ the wiring, or the gauge.

As for the temp sender, Im not sure how to test that, but I guess someone else might know.

for the sender your gonna have to check it with an ohm meter. cant remember the exact specs on it tho... For the gas guage easy check to see if its the guage or the sending unit is to ground the guage with the key on and it should go to full. if its the sending unit then the float has became saturated with fuel and is stayin at the bottom of the tank
